Ingredients:

4 chicken breast. 

1 medium avocado. 

2 tbsp flour. 

salt and pepper

2 onions finely chopped. 

1-2 tbsp curry powder. 

1/4 cup (2 oz) margarine. 

1 1/2 cups (3/4pt) chicken stock. 

 

ACCOMPANIMENTS:

raisins or sultanas.

chopped nuts.

grated coconut.

chutneys.

chopped hard boiled egg.

thin slices of cucumber.

thin sices of banana.

thin slices of tomato.

 

Directions:

  1. This is a mild curry which goes well with the delicate buttery flavour of avocado.
  2. Cut the chicken into 1'' cubes and roll it in the seasoned flour. Fry the onion and curry powder in the margarine until the onion is soft.
  3. Add the cubes of chicken and cook for about 5 mins. to brown the chicken lightly. Add the stock and simmer for 30 mins.
  4. Peel and slice the avocado into thin 1'' pieces and gently mix it into the curry. Cook for 5 mins. more but no longer as the avocado begins to soften. Serve on a bed of rice, allowing 1/3 cup (2oz) fo rice per person. Serve with the selections of the accompaniments to curry suggested above.
