1 medium or 2 small avocados.
3/4 cup (1/3pt) white sauce.
3 eggs separated.
salt and pepper.
- Make the sauce and allow it to cool. When the sauce is cool add the beaten egg yolks and beat well.
- Peel and grate the avocados then stir it into the sauce mixture. Gently fold in the stiffly beaten egg whites and season to taste.
- Pour into lightly greased souffle dish and bake at 200C/gas 6 for about 30 minutes until risen.
