Avocado Souffle

Ingredients:

1 medium or 2 small avocados.

3/4 cup (1/3pt) white sauce.

3 eggs separated.

salt and pepper.

Directions:

  1. Make the sauce and allow it to cool. When the sauce is cool add the beaten egg yolks and beat well.
  2. Peel and grate the avocados then stir it into the sauce mixture. Gently fold in the stiffly beaten egg whites and season to taste.
  3. Pour into lightly greased souffle dish and bake at 200C/gas 6 for about 30 minutes until risen.
