Bridgetown Patties

Ingredients Required:

1kg White Italian Onions(s)



1 Garlic (Loose Bulb)(s)



1kg Plum Vine Tomato (s)



1kg Red Long Peppers(s)



1 Thyme (60G Pack)(s)



Olive Oil
Salt and Pepper
Egg white


pastry using 4 cups (1lb) flour.

2 tbsp cooking oil.

1 lb mince beef.

1 medium onion finely chopped.

1 garlic cloves chopped.

3 tomatoes finely chopped.

salt and pepper.

1 bonnie pepper seeded and chopped or hot pepper sauce to taste.

1/2 tsp thyme.

2 eggs beaten.

1 egg white.


  1. Brown the minced beed in the oil, then add the onion and garlic and cook for 5 mins. Add the tomato, salt and pepper, bonnie pepper or hot pepper sauce and thyme and cook for a further 5 mins. stirring ocassionally.
  2. Stir in the beaten eggs, cook for anothe 2-3 mins. and then allow the mixture to cool. Roll out the pastry until 1/8'' thick and cut into 5'' circles, then fold each over and seal the edges with a little water and press them together with a fork.
  3. Make 2 or 3 little holes in the top to allow the steam to scape and brush with the beaten egg white. Bake on an ungreased baking tray at 220C/gas 7 for 20-25 mins.
  4. Patties also make a tasty accompaniments to drinks, in which case cut the pastry into 2'' circles, fill each with a teaspoonful of meat and bake for 15-20 mins.
