Candied Sweet Potatoes

Ingredients Required:

1kg Sweet Potatoes. (s)



Agostura Bitters
Salt (to taste)
Brown Sugar


6 sweet potatoes.

3/4 cup (6 oz) brown sugar.

2 tbsp butter.

1/2 cup (1/4pt) water.

1 tsp salt.

1 tsp agostura bitters.

1 tsp rum.


  1. Boil the sweet potatoes in their skins for 20-30 mins. according to their size. Cool them a little then peel and slice into a 1/4'' slices and arrange them in a lightly greased baking dish.
  2. Mix the sugar, butter, water and salt in a small pan and cook for 3 mins. over a low heat. Stir in the bitters and the rum, pour over the sweet potatoes and bake at 180C/gas 4 for 30 mins.
