Chicken stock

Ingredients:

2 large or 4 small avocados

1 large lime juice or 3/4 of a lemon juice

2 cups (1pint) chicken stocks

1 small cartoon of natural yoghurt

salt and pepper

3 blades chives chopped

Preparations:

  1. Halve the avocados, remove and reserve the stones and scoop the flesh from the skins.
  2. Liquidise the avocado with the lime or lemon juice, the stock and yoghurt.
  3. Season with salt and pepper and return the avocados stones to the soup to prevent it discolouring.
  4. Chill the soup, removing the stones before serving. Serve garnished with chives.
