A Syrian peasant salad dish, FATTOUSH can cleverly use up slightly stale pitta bread. this is an extra ordinary salad and full of nutrients as well as delicious.

 

Ingredients:

2 large flat pitta bread.

2-3 large lemon juice.

i bunch of spring onions, thinly sliced.

6 large ripe tomatoes,chopped.

1 cucumber, diced.

1 small green pepper, deseeded and finely diced.

1 small red pepper, deseeded and finely diced.

2 large garlic cloves, finely chopped.

8 tbsp olive oil.

6 tbsp finely chopped flat-leaf parsley.

3tbsp finely chopped coriander leaves.

3tbsp finely chopped mint leaves.

salt and freshly ground black pepper.

150ml/1/4pt Greek yogurt, to serve.

pomegranate seeds, to garnish (optional).

 

Directions:

  1. Toast the pitta bread lightly then break them up into bite size pieces.
  2. In a bowl, toss the pieces of bread in the lemon juice, ensuring that they are all soaked.
  3. Mix with all the remaining ingredients and season to taste, adding more lemon juice if necessary.
  4. Served topped with a spoonful or two of yogurt and sprinkled with pomegranate seeds if using.
