Hot Banana Meringue Pudding

Ingredients Required:

1 Limes (s)



1 Lemons (s)



2kg Bananas (s)



Brown Sugar
Ground Nutmeg


3 medium bananas.

1cup (2oz) breadcrumbs.

1 egg separated.

1 cup (1/2pt) milk.

peeled rind of 1 lime or a lemon.

3/4 cups (6oz) light brown sugar.

1/4 tsp ground nutmeg.

1 tbsp caster sugar.


  1. Liquidise or mash the bananas and then stir in the breadcrumbs. In a separate bowl beat the egg yolk with the milk and the lime or lemon rind.
  2. Peel the rind in large, easily seen pieces as it is removed later. Remove the rind and then stir in the banana. Pour into a lightly greased baking dish and cook at 160C/gas 3 until a knife inserted in the middle comes out clean, about 30 mins.
  3. To make the meringue beat the egg white until stiff then beat in the caster sugar. Spread the meringue over the cooked pudding and return it to the oven for a few mins. until lightly browned.
