using 2 1/2 cups (9oz) flour.
1/3 cup (3oz) sugar.
1/4 tsp ground cinnamon.
1/4 tsp ground nutmeg.
5 cups (2/1/2pts) sliced fresh mango.
1 tsp lime or lemon juice.
1 tbsp milk.
- First make the pie shell ready, then put the sugar, cinnamon, nutmeg, sliced mango and lime or lemon juice in a bowl and mix well.
- Tip the mixture into the pie shell and make it level. to make the decorative lattice top, roll out the remaining pastry into a rectagle 10'' long.
- Slice this into 10-12 strips of 1/4'' wide and lay them in a lattice pattern over the mango filling, trimming them to fit. Where a lattice strips meet the pie shell around the edges, join them by dotting with a little water and pressing them to seal. Brush the lattice with the milk to glaze, then bake at 200C/gas6 for 50 mins.
