1 Flat Leaf Parsley (Bunch)(s)

1kg Plum Vine Mini Tomatoes(s)

Olive Oil
Salt and Ground Black Pepper (to taste)

A classic of Neopolitan cuisine, Pizzaiola is a rich and highly flavoured tomato sauce used with meat and pasta.

4 thick rump or sirloin steaks.

2 tbsp olive oil.

salt and freshly ground black pepper.

2 tbsp olive oil.

2 onions, finely chopped.

4 garlic cloves, finely chopped.

1 small red pepper, deseeded and finely chopped.

675g/1 1/2lb veyr ripe tomatoes, chopped.

large pinch of oregano.

3 tbsp coarsely chopped flat-leaf parsley.

dash of tabasco sauce.

  1. First make the sauce. Heat the oil in a saucepan and suate the onions for 2or 3 mins. until lightly coloured. Add the garlic and chopped red pepper and cook for a minute or so.
  2. Add the tomatoes, oregano and most of the parsley. Season with salt and pepper and tabasco. Cover and simmer gently for about 15 mins. stirring from time to time. The tomatoes should not be allowed to become too pulpy
  3. Over a fairly high heat, put the oil in a large suate pan which has a lid. Season the steaks and brown them rapidly on both sides.
  4. Once the steaks are browned on both sides, reduce the heat to very low and pour the sauce over them. Cover and cook for 3-7 mins. depending on how well done the steaks are to be. Adjust the seasoning if necessary.
  5. Serve the steaks with their cooking sauce poured over them and sprinkled with the reserved parsley. Try adding some chopped of mushrooms to the sauce for extra flavour.
