Ingredients:

2 medium onions chopped.

1 garlic cloves crushed.

cooking oil.

6 okras sliced crossways.

3 medium green peppers chopped.

2 medium eggplant (aubergines) cubed.

14 1/2 oz tomatoes.

1 tsp oregano.

salt and pepper.

Directions:

  1. Fry the onion and garlic in just enough oil to cover the bottom of the pan. When they are soft add all the other ingredients, salt and pepper to taste.
  2. Cover and simmer gently for about 30 mins. until the vegetables are tender. Stir ocassionally to prevent sticking and adjust the seasoning before serving.
