Passion fruit have a most exotic flavour and as they get riper their skins more and more wrinkled. This simple dish is also delicious using stewed guava puree in place of the passion.
2 cups (1pt) thick custard.
2 tbs (1oz) brown sugar.
5 passion fruit.
- Make the custard thick enough to hold its shape and sweeten it with the sugar.
- Strain the passion fruit pulp to remove the seeds and stir the juice into the custard. Serve very hot or cold with vanilla ice cream.
