Passion Fruit Cream

Ingredients Required:

5 Passion Fruit(s)



Demerara (Brown Crystal) Sugar

Passion fruit have a most exotic flavour and as they get riper their skins more and more wrinkled. This simple dish is also delicious using stewed guava puree in place of the passion.


2 cups (1pt) thick custard.

2 tbs (1oz) brown sugar.

5 passion fruit.


  1. Make the custard thick enough to hold its shape and sweeten it with the sugar.
  2. Strain the passion fruit pulp to remove the seeds and stir the juice into the custard. Serve very hot or cold with vanilla ice cream.
