Reuben sandwiches with french fries

|1kg Red Cabbage (s)||
|Thousand island dressing|
|Swiss cheese and gherkins|
1/4 green cabbage, cored, finely shredded
1/4 red cabbage, cored, finely shredded
60ml (1/4 cup) thousand island dressing
500g frozen shoestring fries
8 slices rye bread
8 slices Swiss cheese
4 slices silverside
Gherkins, to serve
Combine the cabbage and dressing in a large bowl. Season with salt and pepper.
Preheat grill on medium-high. Spread the fries over a large baking tray and cook under grill, turning occasionally, for 5-10 minutes or until crisp and light golden. Season with salt.
Toast the bread until golden. Place the toasts, in a single layer, on a large baking tray. Top with the cheese and cook under grill for 1 minute or until the cheese melts.
Divide the silverside among half the toasts. Top with the cabbage mixture and remaining toasts, cheese-side down.
Place the sandwiches and fries on serving plates. Serve with gherkins.
