Rum and Orange Banana Flambe

Ingredients Required:

1 Large Oranges - beautifully sweet and juicy(s)



6kg Bananas (s)



Brown Sugar
Ground Nutmeg


6 large bananas.

1/2 orange grated rind.

juice of 1 orange.

pinch of ground nutmeg.

1/4 cup (2oz) brown sugar.

1/4 cup (2oz) butter.

1/2 cup(1/4pt) rum.


  1. Put the unpeeled banana on a baking tray and bake at 180C/gas 4 for 10 mins. turning them once and after 10 mins. the skins will have blackened.
  2. When they have cold enough to handle, peel them, halve them lenghtways and arrange in a heat proof serving dish. In a small bowl mix the grated orange rind, orange juice and nutmeg and pour it over the bananas.
  3. Sprinkle over the sugar and dot with the butter. Place under a hot grill for about 6 mins. until the sugar has melted and bubbles. Heat the rum gently for just 2 mins. When the bananas are ready ignite the rum and pour it flaming over the bananas.
