This is a very handy recipe for making good use of the unripe mangoes which fall at the beginning of the mango season, and this is so delicious.

Ingredients:

8 cups (2lbs) peeled and chopped green mango. 

4 cups (2lbs) sugar. 

1 1/2 cups (3/4pt) white vinegar. 

1 tsp salt. 

1/3 cup (2oz) prunes. 

1/3 cup(2oz) raisins. 

1/3 cup (2oz) currants. 

3'' fresh ginger. 

2 garlic cloves. 

1 yellow pepper

Directions:

  1. Put the mango, sugar, vinegar and salt in a large pan. Chop the prunes, raisin, currants and add them.
  2. Peel and grate the ginger and add it along with the crushed garlic. seed and chop the yellow pepper before adding it.
  3. Bring to the boil and cook for 30 mins. stirring ocassionally, until the chutney is thick. Cool and pour into sterilised jars.
