Stuffed Butternut Squash

Ingredients Required:

1 Braeburn Apples (French)(s)



1 Spanish Onion.(s)



Butternut Squash
Salt and Pepper (to taste)

Butternut squash are pear shaped, cream coloured on the outside and bright orange inside. This is so delicious simple recipe to try to cook at home. so why not try?


2 butternut squash, 6'' long.

8 pitted prunes finely chopped.

1/3 cup (2oz) raisins.

2 tbsp rum.

1/2 a small apple, peeled and finely chopped.

1/2 a small onion finely chopped.

salt and pepper.


  1. Half 6'' squash will be enough for one person. Soak the finely chopped prunes and raisins in the rum for about 2 hrs. Then add  the remaining ingredients and mix well.
  2. Cut the unpeeled butternuts squash in half lengthways, scoop out the seeds and parboil the squash for 10 mins.
  3. Drain, and when cool enough to handle, fill with the stuffing. Bake at 180C/gas 4 for 35 mins. until the squash is tender.
