Stuffed Plantains

Ingredients Required:

1 Spanish Onion.(s)



1 Garlic (Loose Bulb)(s)



1kg Plum Vine Tomato (s)



1 Green Pepper(s)



3kg Plantain(s)



Salt and Pepper


3/4 lb minced beef. 

3 large ripe plantains (their skin are nearly black when ripe). 

6 slices streaky bacon. 

2 onions chopped. 

1 garlic cloves crushed. 

1 green pepper chopped. 

2 tomatoes chopped. 

1/2 tsp oregano. 

salt and pepper. 

2 eggs beaten. 

oil for deep frying


  1. Fry the bacon until crispy and then set it aside. Cut the plantains into four lengthways so that they form 12 long, strip and suate them in the bacon fat until they are soft and golden.
  2. Carefully drain them on absorbent paper and when they are cool enough. To make the filling, brown the mince in the bacon fat and then add the onion, garlic, green pepper, tomato, oregano, salt, pepper and the crumbled bacon.
  3. Cook until the onion and green pepper are soft about 20 mins. Fill each plantain circle with the stuffing, deep them into the beaten egg and deep fry in oil, turning once to brown both sides.
