Sweet Banana Cake

Ingredients:

1/4 cup (2oz) margarine.

1/2 cup (4oz) caster sugar.

2 eggs beaten.

1 cup (4oz) plain flour.

1 tsp baking powder.

1 tsp salt.

3 bananas peeled and halves lenghtways.

juice of 1 lime or lemon.

1/3 cup (3oz) brown sugar.

1/3 cup (1oz) grated coconut.

Directions:

  1. Cream the margarine and sugar until light and fluffy, then add the eggs and beat well. Add the sifted flour, baking powder and salt and again beat well.
  2. Pour into a lightly greased 8'' square tin spreading evenly. Quickly arrange the banana slices on top, sprinkle with the lime or lemon juice, brown sugar, and coconut.
  3. Bake 180C/gas 4 for 30-35 mins. To turn the cake out put a sheet of grease proof paper on a wire tray and turn the cake onto it. Quickly put a second wire tray over the base of the cake and invert again.
