Sweet Potato Souffle
|1kg Sweet Potatoes. (s)||
2 cups (1pt) cooked and mashed sweet potatoes.
2 eggs separated.
1/4 tsp ground nutmeg.
1/2 tsp ground ginger.
1 cup (1/2pt) milk.
- Separate the egg yolks and whites and mix the yolks thoroughly with all the other ingredients.
- Whisk the egg whites until stiff and fold them gently into the sweet potato mixture.
- Turn it into a lightly greased baking dish and bake at 180C/gas 4 for about 45 mins. until browned on top and well risen.
