Sweet Potato Souffle

Ingredients Required:

1kg Sweet Potatoes. (s)



Ground Ginger
Ground Nutmeg


2 cups (1pt) cooked and mashed sweet potatoes.

2 eggs separated.

1/4 tsp ground nutmeg.

1/2 tsp ground ginger.

1 cup (1/2pt) milk.


  1. Separate the egg yolks and whites and mix the yolks thoroughly with all the other ingredients.
  2. Whisk the egg whites until stiff and fold them gently into the sweet potato mixture.
  3. Turn it into a lightly  greased baking dish and bake at 180C/gas 4 for about 45 mins. until browned on top and well risen.
