Tamarind Sauce

Brown Sugar

Tamarinds are a main ingredient in worcestershire sauce so this has a similar sharp flavour and is good served with all meats.

Ingredients:

3 cups (1 1/2 pts) water.

6 large tamarind pods.

2 tbsp brown sugar.

cornflour.

Directions:

  1. Bring the water to the boil. Shell the tamarinds and add the flesh and seeds to the water.
  2. Simmer until reduced by half and the flesh comes off the seeds. Strain to remove the seeds and then return it to the heat.
  3. Add the sugar and a little cornflour to thicken the sauce as required. Serves 6.
