Ingredients:

2 tbsp margarine.

1 onion finely chopped.

4 bananas sliced.

3 slices pineapple cubed.

1 green pepper silced.

2 large apples, peeled and sliced.

1 tbsp curry powder.

1 tbsp flour.

1 1/2 cups (3/4pt) water.

6 dates chopped.

2 tbsp sultanas.

1 lime or 1/2 lemon juice.

1 tsp sugar.

salt and pepper.

Directions:

  1. Heat the margarine and fry the onion gently for 5 mins. then add the banana, pineapple, green pepper and apple and cook for a furthe 4-5 mins. stirring once or twice.
  2. Mix the curry powder and flour and add it to the pan and cook for a further 2 mins.
  3. Stir in the water, dates and sultanas and simmer for 10 mins. Add the remaining ingredients, stirring them in very carefully to ensure the fruit is not broken. Serve immediately while the fruit is still firm, accompanied by rice.
