Ingredients:

2 tbsp/10z margarine

1 cup/4oz grated cheese

4 large bananas mashed

1 egg yolk bean

1/4 tsp mustard

salt and pepper

parsley chopped

chives chopped

6 slices bread for toasting

butter for toast

Preparations:

  1. Mealt the maragirne over a low heat then add the cheese and banana, stirring until the cheese melts and the mixture is well blended.
  2. Stir in the egg and mustard and season to taste with salt and pepper. Cook gently for a further few mins. stirring continuously. Set aside to cool.
  3. When the banana mixture is cool, make the toast, butter it and cut into squares. Spread the pieces with the banan topping, sprinkle with parsley and chives and brown under a hot grill for a minute. Makes about 24 squares to serve with drinks.
